Roasted Garlic Salad Dressing

I recently posted a simple recipe for making roasted garlic. It is amazing! I just can’t get enough. I probably give off a garlicky enough aura to protect my whole household from vampires. Anyway, I promised in that post to share my recipe for roasted garlic salad dressing… and here it is!

Garlic: The New Kitchen Staple

If you haven’t made roasted garlic yet, I highly recommend it. First, because it’s super easy to make. It only takes a couple ingredients and a few minutes before you pop it in the oven and let it roast to perfection.

Second, the taste of roasted garlic is just phenomenal. I’m a bit of a garlic lover anyway, but roasting it takes it a different direction. It’s a little mellower and sweeter than raw garlic, which makes it perfect for salad dressings. Also, if you have a hard time digesting raw garlic, roasted garlic may be a little easier. Also, making roasted garlic ahead of time makes cooking dinner so much faster! When I’m trying to get dinner done in a hurry, it’s a pain to peel and mince sticky cloves of garlic. It’s so handy to have a bowl of mashed roasted garlic all ready to go in the fridge. I just scoop a teaspoon or two out and move right along.

Roasted Garlic Salad Dressing

Once you have the roasted garlic all ready to go, making this salad dressing only takes a couple of minutes. My immersion blender is my go-to gadget for this type of job, but you can also use a blender or food processor. Just mix all the ingredients together until they’re smooth and you’re done.

You can easily change out the spices in the ingredients to mix up the flavor profile. Use cumin for chicken fajita salad or Italian seasoning for an Italian style salad with fresh tomatoes and basil.

And if you have leftover salad dressing, it also makes an excellent marinade for just about any protein.

    Tried this tonight – was so creamy and good!! Had romaine and roasted veggies salad with this. I was worried it might be too strong in flavor, but it had a gentle flavor and a sweetness to it. Thank you!

    Oohhh… I have roasted garlic in the fridge, and honey fermented garlic on the counter… this would be great as a veggie dip as well.
