Adding the honey likely made the mixture too thin to hold together. Since coconut oil is solid at room temperature and honey is a liquid the consistency wouldn’t work for shaping into balls.

I made these tonight after a long hiatus. What I love most is how they aren’t super sweet like macaroons. I also like that they’re healthy. Additionally, I can eat theses on a carb conscious eating plan. I add course salt (Pure Ocean) on top and the flavors blend beautifully. I like a mix of 100% and semi-sweet chocolate for these. These are a favorite amongst the crowd. I wish I could post a picture.

Honestly I was so excited to make these as the reviews were great; however, mine didn’t come out like the picture and the instructions. My mixture wasn’t white like the picture. I had to add some honey as the mixture wasn’t sweet at all. After I refrigerated the mixture, I couldn’t form it into balls- it kept falling apart. What did I do wrong? I was very disappointed. I ended up having to spread the mixture into a pan and spread some of the melted chocolate on top. It tastes fine but I was really looking forward to having a dessert that looked like your picture.

Sure you can! You can use any method you’d like for melting chocolate. An easy substitute for a double boiler is to place a glass bowl over a pan with a small amount of simmering water in it. The glass bowl shouldn’t touch the water. The heat from the steam will melt the chocolate.

Also, i could only find a large bag of coconut flakes, 14 ounces so I weighed out 5 ounces to use and when this was all mixed with the peanut butter (I don’t have almond butter on hand) the filling is very brown in color, nothing like the picture. Any advice or clarification? Thanks!
